Grease traps are a valuable tool that utilities and food service establishments can deploy to minimize fats, oils, and grease (FOG) in their collection systems. These devices come in a variety of shapes and sizes, but share many of the same principles to remove FOG from water after it is used to prepare food and is discharged as wastewater.
